Homemade Elderflower Champagne can be a wonderful annual ritual, and there are few finer things than a glass of Elderflower in the garden on a hot summer's day.

Remember that when you make it, your homemade Elderflower Fizz won't be as sophisticated as a wine made in the traditional way, when the yeast has had weeks or months to ferment out fully. And if you choose to leave your elderflower for longer so the yeast ferments out, it will get more and more dry, sometimes unpalatably so. If it is a bit rustic for you when you come to drink it, adding a little elderflower cordial (ideally homemade elderflower cordial of course) will mellow it out.
